Smoked Salmon Salad
- 80 grams smoked salmon
- 2 cups mixed salad leaves
- ¼ cucumber, sliced thinly
- 50 grams beetroot, (canned, drained and pat dried)
- 6 cherry tomatoes, halved
- 3 fresh basil leaves
- Drizzle extra virgin olive oil
1. Arrange all the salad vegetables in a large bowl. Top with the smoked salmon and basil, then drizzle with extra virgin olive oil.
2. Add salt and pepper or additional herbs of your choice for added flavour.
